That 'texture' is because Walmart and MANY other stores add LFTB (I.E. pink slime) to ground meat products. Since the expose I think we all know all to well what that stuff is now.
Here's Walmart's promise that maybe/soon when they can get the countries they buy meat from to comply, they will stop adding it! :B

Has anyone found packages of beef that says NO LFTB added?
Thankfully I have been able to find local butchers, local green markets at almost every area I have traveled to and usually in close proximity to the CG I was staying at.
I thought it was maybe because the patties are stamped out by machine and maybe compressed in the process. Idk...... I grind my own beef anyway when we are having it so I'm not as familiar with the store or manufacturer processing.
Re the red color, we raised our own beef when I was a kid and the whole family would go to the butcher on packing day and wrap and label the meat. It was never the pinkish color you see in the grocery store. More a liver/blood red color.
