Maybe change in cooking turkey is good

On a TV cooking show last day or so, I saw a woman apparently boil the turkey for however long but not long.
She dried it good and put in the pan and cooked it on 275 for 21/2 to three hours covered with foil.
She then took it out and stuffed it and cooked it at 350 for another couple or three hours.
Sounds like a good way to stop any spoilage from a cold turkey and stuffing, in the oven.
Cooking time, is that too long though?

  • The biggest problem when cooking a stuffed turkey is making sure the stuffing is fully cooked......which usually means the turkey is overcooked and dried out.

    The above cooking method is about the right time for a stuffed 20Lb turkey. The advantage is the pre-boil and first 3 hours is at a lower temp.

    An unstuffed 20lb turkey should only take 4-4 1/2 hrs at 350*F.

    Cooking time is misleading.......you want thigh meat at 165*F internal temp

  • Hard to get "spoilage" when you cook the living carp out of it! LOL! Well, unless you are talking about spoiling the enjoyment of the meal.
  • Sounds like a long time cooking to me. I can smoke one in 4+ hours, fry one in 42 minutes. A lot of us eat dressing with our turkey not stuffing so I could be completely wrong.
