Meal Ideas

We're going to Yellowstone in May and will have our longest stay in the trailer yet. Usually we do a lot of eating out or grilling steaks and hamburgers. But we're staying at Fishing Bridge so outside grilling would be limited. We've got a small 1 1/2 quart slow cooker and have thought of pre-making some spaghetti sauce to freeze and reheat in the slow cooker.

Any other meal ideas? Ideally things that are warm (since it will be May in Yellowstone), don't take a lot of time (to maximize time out in the park) and filling (since we plan a lot of hiking).

Our trailer is small, with a small microwave, 3 burners, stove and also our slow cooker.
  • I would pre-cook some hearty soups, stews and chili and freeze them flat in ziploc freezer bags. Move one to the fridge in the morning and let it defrost while you're out and about. When you get home you can warm it up and pair it with a pan-grilled panini, wrap or sandwich of some kind. Pre-made taco meat is another thing that can be defrosted and made into burritos or quesadillas and served with warm bowl of black beans. Have fun in Yellowstone. One of our favorite places ever! :)

  • For the slow cooker, put in a roast or a bird, some root veggies like carrots, turnips, potatoes, a few spices. I like a little garlic, onion, salt and pepper. Put in a little water, turn it on and enjoy your day.

    The meat will come out very tender, and all your veggies will be done.

    Same goes for pasta sauce. Brown some ground beef. Put that in the pot with some finely chopped peppers, tomato paste, tomato sauce, spices to your taste. When you get back in the evening cook some pasta to go with it.
  • My husband has celiacs so prepackaged foods are often a no go. It's just much easier, and more satisfying, to premake our own food and freeze. Such as the spaghetti sauce will be premade and frozen, then we just have to cook the noodles (rice noodles) and warm up the sauce.

    I know it's not healthy but once in awhile we like fried chicken, potato salad and baked beans. All those things keep well in a cooler.

    Peanut butter and jelly sandwiches and fruit are a favorite.
    Pasta salad is also good. Make ahead.

    I remember when we had picnics when I was a child (way back when) we had thick sliced bologna and cheese sandwiches. Everything tasted better camping!!

    I like to do real cooking when I'm RVing, but I do a lot of pre-cooking at home. Pre-cooking meat, sauces, etc and putting them in tupperware or freezer bags and freeze. Meals while camping usually are made by just assembling the frozen ingredients and heating. Pretty fast, but still homemade

  • Alot of options with a slow cooker if you have fridge room. Could even prep some slow cooker meals at home in a container, freeze at home, and just drop it in the pot at the campground.
