Mmmmmm, SMOKIN!

Ran across this article today on wood selection for smoking. I'm going to have to get out my apple or hickory rut, it seems.

  • Thank you for that link. We enjoy the different smokes for different foods. Smoked trout is a treat too.
  • Add pine needles to the list for seafood like clams and mussels. I think Steven Raichlen has an actual recipe involving mussels.

    Also if you like jerked meats (chicken and/or pork) you need pimento wood which can be ordered off the 'net. Or just do as many missing home Jamaicans do: use bayleaf wood OR dried bayleaves and whole allspice berries soaked in water. Thing of sheer beauty if ya like spicy foods.
