The air space is there to hold the rising heat around the ceramic. This keeps the heat on the sides and holds it there.
The crock pot works best with liquid, but because the newer ones run hotter, it isn't necessary.The idea behind the crockpot is simple, use heat that is too low to boil off the liquid too fast or to burn on the bottom.
The crock uses a ceramic pot a.k.a. a crock. The reason is that it is a poor conductor of heat and as such it requires less adjustments, cast iron is the same and gives even cooking for the same reason.
The NeWave can't be considered as an alternate until it is determined that it can hold heat under 200 degrees for many hours, that a vessel is available that will prevent it from cycling to often and that 3 different temperatures settings are available.
You really need to have some first hand knowledge of how a crock pot performs before making a comparison.
