One Pot Pressure Cooker

My favorite kitchen cookware.

The stainless steel pressure cooker is a great addition to the camper and can really help save propane.
I cook 10-20 mins depending on dish, keep the lid on and let it cook until the pressure drops and opens valve, which means temp is below boiling now (212).

Cut up yellow onion (and green, yellow, and or red peppers) and sauté in pot with some light oil while you prep chicken. Drop your chicken in (two breast, or I like two things).
Add some rice (half a cup) and the amt of water called for.
Add half jar salsa
can black beans, no need to drain
can of other beans (kidney, pinto, chili, northern etc)
salt and pepper.

Wait until mix starts to simmer before placing pressure cooker lid on, this way you can keep stirring so it does not stick.
Cover and cook according the how long the rice needs to cook. Rice usually 40 minutes, so cook under heat for 25-30 mins, turn off heat and let pot sit for the remaining minutes, cooking under the pressure.

Serve up with cheese if desired and use chips at first to make it a delicious dip, then dig in with a fork later.

I like to have guac and sour cream with it.

This also works if you like to stuff the mix into a burrito.

There is hardly a wrong way to make this, just don't let it be soup. Reduce amount of water if the canned beans are wet.

And, remember the #1 rule of cooking in a camper.
Always make enough so you have left-overs. Cooking is too much work not to make it last a few meals.
  • instant pots are neat. They do make regular pressure cookers that sit on a stove which do not need electricity for those boondocking like myself.
    Caution. Do not use aluminum to cook with. Aluminum is a toxin to humans and has been reported to cause brain diseases over time. An intact coating on aluminum probably does block the aluminum from getting in your food, but stainless is usually safe by itself.

  • Thanks for those ideas. I added the small Instant Pot last year and have used it a lot. I just keep it simple: chuck roast with beef broth, onion, carrot, salt and what herbs are on hand, for example, makes a easy meal.
  • Yep, just did some Ribs... in InstaPot...

    Worked well, a little mushy, but first time out meat fell off the bone... Did 32/5 pressure/relief put rub on ribs first, a 4 cups of water, 1 tbl of Apple cider vinegar... then bbq sauce and BBQ for 15 min...

    Revised or next time, 25 in instapot, 15-30 on BBQ.. to dry it out a little... fun..
