Pantry recipes using canned chicken or salmon?

Looking for recipes that are simple to make with ingredients from the pantry. Looking for ideas of things to make when you haven't been to the store yet...

  • Chicken Reuben

    Sauerkraut
    Thousand Island dressing
    Swiss cheese

    Mix kraut with some of the dressing, then layer ingredients a couple of times and bake. This is quite good done in a DO. Sometimes I add some caraway seeds. Serve with a good dark rye.
  • One of my favorite comfort foods is chicken casserole with canned chicken, mushroom soup, American cheese, dab of sour cream and wide noodles.
  • Sometimes I buy that pack of canned chicken from Costco. Then I make a casserole with cooked broken up spaghetti, the canned chicken, a can of cream of celery soup and cream of mushroom, a jar of mushrooms and then I season it to taste with salt pepper and mix in some dried chopped onions that I also buy from Costco. Sprinkle a little parmesan chz and bake till bubbly. One of my favorite easy casseroles. Not necessarily healthy but tasty.
  • If you don't have eggs, with stale bread, mayo and mustard, salt and pepper, I've made salmon croquets that were pretty good.
  • My family loves canned salmon patties. The secret is to get the skillet and oil really hot, and cook the patties quickly to a crunchy crust on both sides.

    For a small can of salmon--drain off about 1/2 the liquid. Flake up the salmon with a fork, and mix with one egg. Crumble up saltine crackers with your hands, keep pieces no bigger than about 1/4". Mix the crackers in with the salmon. I don't count the crackers, but add about 8 to start with. Keep the mixture moist enough that it sticks together well. Then cook in the hot skillet. I use olive oil.
