I love a peach-blueberry cobbler. My favorite recipe has gone missing :( However, it was quite simple, using frozen peach slices (thawed), fresh blueberries and a simple cobbler batter. No pre-cooking the fruit. -sigh-
One of my other favorites is a mango-blueberry margarita!!
Run a lime wedge around the rim of a margarita glass, then dip the rim in Tajin (chili-lime seasoning). Lime and a little sugar would work too, but the chili is really good.
Muddle 10 large fresh blueberries in cocktail shaker.
Add 1 oz good tequila
1/2 oz coconut rum
1 1/2 oz orange juice
3/4 c. mango puree or mango nectar
4-5 ice cubes
Shake well and pour into rimmed glass (don't strain). Makes 1
Blueberry daiquiris are great, too. For pretty drinks, use frozen blueberries in place of ice in lemonade. I throw a few handfuls into our boozy summer slushes, too.
