Potato Noodles?

What about Shirataki or Miracle Noodles? Very low in calories and contain zero net carbs. Just have to rinse them well. They smell fishy when you open them, but once rinsed, cooked and sauced, not bad at all. terry r.

You could always introduce him to hush puppies. I think they're better than pasta and they're made out of corn meal.

Ronzoni makes Smart Taste pasta that we use. Higher fiber content doesn't seem to cause his blood sugar to spike like regular pasta. They also now make a Gluten Free pasta. We haven't tried that yet but we will.

In addition to the good ideas above have him do some reading about German cuisine: there are some all or mostly potato noodles at a German-French border region. Of course there is also gnocchi but every recipe I've ever read used at least a cup of AP.

Go to any store that carries 'authentic' Asian food. They make an incredible tasting Sweet Potato noodles to die for made from the whole potato.

Also, there are Glass Noodles that are made from potato 'starch'. These are clear translucent noodles that have no discernible taste just like a regular noodle but is super great with soups and different types of seasonings.

Just make sure the package is all written in Japanese from Japan or Korea so you know it's authentic. Don't buy any knock off made here in the USA, The Americans have yet to figure out how to make it right!

You can find the glass noodles in a lot of grocery stores now they are usually on the bottom shelf under the rice.
