Buy some Red Quinoa. Very very tasty grain, and extremely nutritious. Lowest price we have found for it is at Trader Joes. You can add cooked veggies, onions, carrots, corn, currants, black or other beans, to make a complete meal. I mix in shredded cheese at the table. Avoid the white Quinoa - nowhere near as good as red Quinoa - no comparison at all.
DW makes veggie enchiladas, cooks potatoes, onions, and fresh spinach, then wraps them with soft tortilla wraps, add enchilada sauce and shredded cheese. Then bake. Tasty & nutritious!
Spinach has a lot of protein, so does avocados.
