Rotisserie Chicken.

There was some talk in the "Soup Time" tread about rotisserie chicken, and I felt the need to expand.
I have found that a rotisserie chicken can often be about the same price as one that needs cooked and you might want to check when you go into WalMart, I have occasionally found them half price, which is a real bargain. ($4.44)
Saying that, there is just the two of us, so if you have any recipes that you would like to share for leftover chicken, I would be appreciative.

I'll share one of mine.
Penne with Rotisserie Chicken and Caesar Dressing

A packages of lettuce, I use the 50/50
1 or ?? cups chopped chicken
3 cups whole wheat or regular penne pasta, cooked.
A small bunch of flat leaf parsley, chopped
Grated Parmigiano-Reggiano cheese.
Squeeze of a quarter of a lemon, few shakes of kosher or sea salt, and fresh cracked pepper.

Then pass the Caesar Dressing.
  • Not sure of the size as wife buys them but Sams Club sells large rotiserie chickens for five dollars. There is always a line and not every time we go there are they cooking them. Good flavor aand done too.
  • Sounds like our place; make most all of those.

    I usually take everything left over after de-boning and make chicken stock. Ends up in soups and base for roux.

    another favorite here is :
    Rice “Dry Soup”
    2 cups rice
    2 T oil
    2 small onions, chopped
    2 cloves garlic (optional)
    2 cans diced Mexican tomatoes
    4 cups chicken broth
    Jalapeno peppers to taste (about 2 T)
    1 ½ cups cooked diced chicken

    In frying pan, brown rice in oil. Add onions and garlic and cook for 2-3 minutes. Add broth, chicken, and jalapeno peppers. Simmer 25-30 minutes, until liquid is absorbed. (Rice should be done) Serve with sour cream and grated cheddar cheese. Can roll in a tortilla shell for chicken and rice burrito.


    This makes a lot. For two, easily cut the recipe in half and it will still be plenty.

    Costco even sells the leftover birds, already picked off the bone. Best of BOTH worlds!

    Same here. Store rotisserie chickens make great economical travel food.

    Herself will also make chicken and dumplings. She boils the carcass, picks the meat, throws out the skin and bones. While picking the meat, carrots and celery are low boiling in the pot broth.

    Meat goes back in broth. Broth brought to rapid boil. Drop in Mary Bs frozen biscuits, 8 or 9 should do it. Bring up to boiling again.

    Lid goes on, heat lowered to low medium and broth at slow boil. Leave the lid on, no peeking. Did I mention to leave the lid on? Point made.

    After 20 minutes dish up that tasty stuff and consume several bowls. Especially good in winter.

  • We have a RONCO Rotisserie.....set it and forget it :B

    We do a chicken on a Sunday
    Sunday evening we have roasted chicken and mash taters, fresh veggies etc.

    Then Monday we shred left over chicken and have tacos, burritos
    OR we chunk the left overs and do a stir fry
    OR chunk it and toss it with pasta w/cream cheese sauce
