Rotisserie Chicken.
There was some talk in the "Soup Time" tread about rotisserie chicken, and I felt the need to expand.
I have found that a rotisserie chicken can often be about the same price as one that needs cooked and you might want to check when you go into WalMart, I have occasionally found them half price, which is a real bargain. ($4.44)
Saying that, there is just the two of us, so if you have any recipes that you would like to share for leftover chicken, I would be appreciative.
I'll share one of mine.
Penne with Rotisserie Chicken and Caesar Dressing
A packages of lettuce, I use the 50/50
1 or ?? cups chopped chicken
3 cups whole wheat or regular penne pasta, cooked.
A small bunch of flat leaf parsley, chopped
Grated Parmigiano-Reggiano cheese.
Squeeze of a quarter of a lemon, few shakes of kosher or sea salt, and fresh cracked pepper.
Then pass the Caesar Dressing.
