The glaze adds the nice shiney sheen and just a little sweet. I don't think my pallate would detect a discernable difference in the small amount of syrup that is used. The consistancy is almost a paste.

We catch steelies out of the Maitland river in the fall and i'm going to try that method(with real maple syrup of course)another way we do salmon is to make a roulade by cutting them into 1-1/2" steaks, pinning the belly flaps with toothpics,and using a fish grill place a slice of lemon and a sprig of dill on each side and either cook over a campfire or grill constantly basting with melted butter, that'll bring em' in off the river!!

That salmon looks so good just the way it is. You can serve it to me anytime including the green beans and rice. What can I bring for dessert?

Mix the bourbon and real maple syrup for a tasty rib glaze.

We found a recipe that is for bourbon glazed salmon -- extremely yummy. Try adding some bourbon or whiskey into the glaze and forget the spicy rub.

No thermometer. The slab thickness will make times very a little but as a rule, 200 for about an hour leaves nice, moist salmon.

So how long do you smoke the salmon for? Low and slow or fast and hot? Last ? do you use a meat thermometer and to what degree?

BBQ spring (King) salmon, smoked candlefish (eulachon), wild berry compote with tiny strawberries, blueberries, salmon berries, and black berries, with home made blueberry and huckleberry pies. It was truly memorable.
