stuffed jalapeños (in a pinch)

Been a Jap fan my whole life. My fav is to pre cook the bacon (it never gets crisp if raw when you start) and then wrap them about half way through. Crunchy poppers with whatever inside that you like is the ticket. I like them just raw like oysters with hot sauce and lots of it!

Hahahaha ok, but it looked like "nothing up my sleeve, presto". Either way you look at it, good job. I will be stealing that one. My darlin bride has more of those pans in the motorhome now than I'll ever be able to use. We had a 40' toy hauler, and she had'em stuffed everywhere. Now we have a 34' motorhome, and she's trying to finds spots for everything.

I didn't see the pan of bacon at first, but I do the same. I cook Tripas de Lecha, it's a Mexican dish from the milk producing tract of the cow. Man, it's good if you do it right. Do it wrong, and you've got rubber bands LOL. Look it up, it's not for everybody, but an old country boy that eats chitlins, like me, they're good with all the "fixins"

I know a few are gonna turn up their noses at this, but I"m gonna put it here anyway.

One time that you make poppers, Atomic Buffalo Turds, or whatever you call them, try strawberry flavored cream cheese. I know, but it's really good. A little sweet, and a little hot is good together.

Then, we went wild on the flavors, and we made our own flavored CC too. Let you're imagination run with this one, and see what you come up with.

I do them both in the stand and "on the half shell". I also like to do some other varieties of peppers.

italian sausage (I like the hot)
mozzarella cheese
italian seasoning
garlic
cream cheese to smooth it out
parm cheese on top

We love to stuff jalapenos with a mixture of crumbled breakfast sausage, cream cheese and parmesan cheese. Yum!

Did the racks, stood the peppers up cored blah blah blah; got into my beer drinking time!
Cut the peppers in half (boat them), scrape out most of insides w/ a spoon. Filled with a mixture of cream cheese and bleu cheese
Cut cheap thin bacon in half and wrap. Sprinkle some Adolbo on. Put on Bradley rack and smoke. Much faster and easier and therefore done more often.

if you use the pepper stand the grill mess is minimal....but they take longer (to cook the bacon)....its a slow roasting type thing.

you can get the stand and coring tool for less than 20 bucks.
