Saute red peppers and sweet onions in an oven proof frying pan until soft.

Add cumin and oregano.

Add red (or green) salsa and chicken broth and cook until well mixed and warm.

Add tortilla chips (deep fried restaurant type work the best) and gently fold into the salsa pepper onion mixture until well coated.

Break eggs evenly over the surface, and bake in a 350 degree oven until the eggs are cooked.

Serve with sour cream, Mexican Cotija cheese, sliced radishes and fresh cilantro.

It's my favorite breakfast in Mexico. It's a great way to use stale tortilla chips, uses one pan, and left over chicken, beef, or pork can be added.

x2! Use the "freezer" version of the ziplock bags. They hold up better. And don't use fresh mushrooms - they give off too much water and the eggs don't set properly.

And yes, before anyone gets their pants in a bunch, if you eat one of these every day for 40 years, you'll probably get some disease. But one or 2 a year when camping CERTAINLY won't kill ya.

There's always the 7 course breakfast and its really easy. A six pack and a nickel bag of peanuts. :)

Costco sells a great breakfast Hash in a bag. It's enough for at least two meals. We like to top it with a couple sunny side up eggs. Great Sunday breakfast.

I really enjoy a good toasted bagel with cream cheese and either a slice of fresh tomato or a little of my apricot jam glazed over the cream cheese.

A bowl of cold cereal, toast and coffee work for us most mornings especially if we are packing up. Bacon and eggs is also welcome when we have more time.
We sometimes camp with close friends, meals tend to get out of hand. One lady bless her heart gets carried away and there is always too much. Prep and cleanup eat a good chunk out of the day.

If you do go with a crockpot recipe, make sure to get a liner. It makes clean up so easy! I really loved using my crockpot even more since using the liners.

Steel cut oats made with half milk and half water in the crockpot on low - top in the morning with butter, cream, nuts, fruit, granola, whatever suits you. It's a cold morning kind of dish, though.

For summer mornings, we eat muesli with fruit and yogurt. Yummy whole grain, fruit and protein to start your day right.

Have you ever made a dutch baby? It's an easy way to serve a crowd, quick and easy. Check it out - there are a lot of recipes on the internet. I make a topping with a can of crushed pineapple, orange juice, honey and a little cornstarch simmered together for a few minutes. You can also top it with jelly or pie filling.
