ChilaquilesIt seems that each beach palapa restaurant in Mexico has their own version of this, mostly with fried eggs. I've even gotten it "divorciados" with both red and green salsa.
For a crowd, I've cooked the salsa mixture, and poured it over tortilla chips in Pyrex baking dishes, or foil-lined rimmed baking sheets.
