What's your favorite recipe using turkey leftovers?

Two relatives cancelled due to the bad travel weather and the others didn't take any home (they always roast their own turkey on Friday). So here we are, two peope with lots of turkey. More than we need for sandwiches and microwaved plates with the leftover sides.

We've got a lot of extra mashed potatoes, too.

I'll make turkey carcass broth and soup eventually, but in the meantime - what's your favorite recipe?

The recipe consists of leftover smoked turkey, sautéd celery, asparagus, and mushrooms mixed with cooked spaghetti, parmesan cheese, and a creamy white sauce. Mix all ingredients, cover with foil, and bake in a 350ºF oven for 45 minutes.

  • These all sound good! I don't know about you all, but I get bored with my same old recipes. It's great to shake it up with some new ideas to try this year.

  • Turkey casserole.

    Lightly butter bottom of glass baking dish - pat leftover mashed potatoes in bottom. Next put a layer of left over torn up turkey, next layer, left over green bean casserole. Top with chicken/turkey gravy spread to seal casserole. Cover with foil and bake at 350 for 40 minutes. Take out of oven, top with french onion and shredded cheddar cheese - put back in oven uncovered for 5 minutes. Great casserole for using many of the leftovers and it's very good.
  • IF we have leftovers and I do mean IF:
    Herself uses the meat to make one of her tasty stir-fries.
  • Cook the carcas in water or chicken broth until the meat falls off the bones, add seasoning to taste, add egg noodles, either home made or store bought. Now you have a big pot of comfort food!
  • What about Turkey Divan - made with chunks of turkey, broccoli, onions and lots of cheese + a can of cream of mushroom soup.

    Of course you could always freeze leftovers for later - I also freeze leftover mashed potatoes as they are not my favorite to have every night.
