Getting hungry as usual when I read this section of the forum.
I used to add chopped cooked shrimp to a very simple egg salad (whites chopped, yolks mashed with plenty of mayo, a teaspoon of mustard, a little chopped onion, salt & pepper, all stirred together.) Pretty basic, but people always loved it, I think because the shrimp and eggy flavors weren't overwhelmed by other tastes.
