Wow sounds like your in luck ! .. The last tech podcast I listened ( mac break weekly ) about WDC said it seemed a new keyboard and the option for developers to create others was in the new iOS 8 ! Oh and a rumored iTunes revamp also .. Long overdue
As to the irrelevant updates ... wow again !! You haven't had to do that since well, forever ! As I see by the above instructions

I will one happy guy! - DavyddExplorerIt seems that it would be an easy programming function to be able to create an app or way so people could configure keyboards to any style they desire. Wonder why it hasn't been done. After all they are just simulated screens and not real hardware.

I would also turn off "Use Cellular Data" which forces all iTunes downloads only when connected to WiFi, so you don't use mobile data for these. I also keep auto Updates off. I believe iOS only auto downloads on a WiFi connection anyway. - DavyddExplorerApple doesn't dictate a "do it our way approach." They give you choices. It is very simple. Go to Settings then iTunes & App Store, there you will see a heading: Automatic Downloads with four controllable options to turn on or off.

Updates
Turn off Updates and any iOS update that is available will sit waiting for your manual action under Settings > General > Software Update.
It's your choice to conveniently have them automatically update or do it when you want. At least with Apple you will have a choice with a positive push notification and not have to guess if your device supports the latest. - FlatBrokeExplorer II

The default setting is to automatically download updates in the background. But, Apple does not dictate that you must leave it that way. You may disagree with the default setting. I imagine it was chosen to protect those without the technological sophistication to change the setting.
On the other hand, you can switch to Samsung or another Android based devices. That way, you have no guarantee that you will ever be able to update the OS, even if the vendor promises that the next OS will be available for your device. And that includes security updates. For example, the E-Z-2-Use exploit has been in the wild for more than a year. Google patched the vulnerability when it released Android 4.2. But, according to the Android developers site, only 43% of Android devices run 4.2 or higher.
(Those running older versions of Android can protect themselves from the E-Z-2-Use exploit by using either Chrome or Opera browsers.)

As well you should go to Samsung.
