What we’re thinking is that we should probably focus on a toy hauler, either 1) a small 5th wheel, with a used heavy-duty diesel pickup truck or 2) a small used Class C motorhome. I know that you aren’t supposed to be walking around in a 5th wheel in some states, but we would be discrete if that winds up being our choice. With a 5th wheel, Linda would have the pickup truck; with a small Class C, she could drive the RV to make side trips while I’m somewhere else on the Trike.

You have several contradictory wants. You will need to choose between them. It is not safe to ride in a trailer/5er. If you want to walk around/visit refrigerator/visit bathroom without stopping, you need a motor home, Class A, B, C.
You say you don't want to pull a toad, but the driving around while camping requires either a trailer/5er so you have the tow vehicle, a Class B, or pulling a toad. A Class B will get VERY cramped while camping for extended times, especially in bad weather.
Toy haulers usually aren't small. They need to be large to accommodate their own contents, plus have space for the toys. For a toy hauler, you are probably looking for a Class A or a large 5er.
The best solution I have ever seen to your wants was a Class A or C pulling a small pickup truck with a motorcycle in the bed of the truck. You will need a fairly large MH though in order to pull the weight of both the truck and motorcycle.
