Over the years, I have done a lot of work in the right front seat of our coach. Even with the 3watt ERP repeater for the phone (hot spot), we can't stray too far from the blue roads. Coverage is still an issue in mountains or the western states. Fortunately, if I was watching and about to finish something that needed sending, we could hold up somewhere until I hit send. Receiving can just get slow or you may have to wait for a connection to arrive.
Two immediate warning that result from experience:
Don't even try to run a normal mouse. A trackball can work, but even touchpads can be a problem on a rough road.
Back everything sent on an independent solid drive. This means SSD or thumb drive. Conventional HDD get undependable with vibration.
If you and your consort can make this work, it has lots of peripheral advantages. It becomes easy to do travel research underway and reviews and reservations can be a spur of the moment thing.
