My .02 cents worth. I normally use a smoker these days. However right next to my Smoker is a 22 year old Weber grill that just won't die and I can still get parts for it. I also have one of the early Weber Q100s for our RV. Is it perfect? Nah but for 95 percent of the BBQing we do camping it does great. The reason I would still recommend the Weber is parts availability.
I've never heard of STOK Gridiron, when I look at Amazon I don't see very many reviews for it compared to the Weber or the Coleman. Your call I'd be more inclined to look at the Coleman or Weber.
