I would look at the battery. If they are original or over 3 years old, I would start with them. At night, the electrical load is higher because the increased use of the lights. It sounds like the convertor/inverter is working properly, lights get brighter when it kicks up the voltage, thus hearing the fan to cool it. Shuts down when battery voltage is reached, and repeats. With a properly charged good battery, you should not see any fluctuation in the voltage or light quality.
