I remember a scout leader from some time ago (I was a boy scout) who had constructed a big stove based around a residential water heater burner. I think he had gone to a few successively smaller sizes of orifices before the output got down to something sort of reasonable. It certainly was fast at heating a big pot of whatever.
The Coleman burners probably sound loud because they're running at a higher pressure than the RV stove burner. It may not be a heat output question.
