Don't know if your trailer has ducted AC nor if your thermostat is one of the Coleman units that utilizes remote temp sensors. Anyway, make sure that the AC is not blowing directly at the thermostat or remote sensor whichever the case may be. When one of our AC ducts gets turned such that it blows on the remote sensor in our back bedroom it will act as you describe. Adjusting the duct direction solves the issue in our case.
