so I am just trying to understand what the problem is here, sounds like everything is working properly to me. are you saying it gets to hot for baking? or that it won't shut off the main burner? maybe buy a cheep oven thermometer and place it in to see what the temp actually is.
the tip of the thermocouple is supposed to get bright red, if it wasn't working then your oven pilot wouldn't stay on.
