I can't see where there should be a problem doing what is proposed. As long as the inverter can handle the start draw that only lasts a second or two the running amps should be easily supplied by a 100a alternator while it supplies the vehicle needs. I don't see any need for a big battery bank as the use will be power direct from alternator to the AC through the inverter. All the battery has to do is help the inverter with the start draw that the alternator may not be able to supply alone. Proper wire size will be important but otherwise I see no big issues.
