Just to update this, did another camping trip this weekend. I got 8.9 mpg on the way there and 9.8 mpg on the way home. I had a side wind on the way there, and no wind (and did not use A/C on the way home due to cool temps - 70*F). Terrain was rolling hills and flats, about 50/50.
Cruise was set at 109 Km/h all the way, speed limit is 110 Km/h (68 mph).
I was lighter this trip by about 500# GCW (weighed it on the way there at a highway scale).
