I was finally able to break away from my work schedule and get busy on the plumbing. The water system is an old school air compressor assisted pressure system. There is a small 12 v air compressor that charges up a pressure tank and the pressure moves the water through the lines. It does have some advantage over a supply pump, if the compressor fails, unlike a supply pump, you can go to the nearest gas station or carry a small battery operated compressor and pressurize the system. It also tends to run less since it doesn't cycle on at every faucet opening or toilet flush.
First thing was to build new drains. The bath drain:

The kitchen trap:

The horizontal drain run from the kitchen sinks to the exterior (this will be covered in a chase after I have the supply lines run):

The exterior water inlet with the attached pressure gauge (you can see the outboard air Schrader valve for filling the tank with air from the outside):

The water tank under the driver's side dinette bench (the inlet side):

Water tank compressor switch on the side of the dinette (the compressor has a pressure switch, also):

Pex tubing ready for installation of the supply lines:

My usual MO for plumbing is to buy in excess and have enough fittings on hand but I've already revisited the store to replenish and add to the pile of fittings. :D
Hopefully, I'll get some more time this weekend to install the supply lines. I might have to go to church on Saturday, just to keep the language in a non-blasphemous state. :B
