Cheap and easy, not elegant.
Carry second battery and tank in truck bed. Add second battery with connections at campsite. Swap out tank as needed.
It appears there may be space available for the batteries on either side of the AC which would allow both tanks to be side by side.
Another option is to install a proper AC in the roof. You may get one reasonably priced at a salvage location.
