The 6.0 gasser has 90% of its available 380 lb/ft of TQ at 2,000 rpm, 360 HP is nothing to sneeze at.
As long as your not RPM adverse then the gasser could work.
But if you have it in your mind that you want another diesel... The gasser will not work... Even if it has 500 hp.

I want my TV/Daily Driver to tow Heavy very well, and being a soft riding DD, I will put up with a little harshness in my daily drive and some noise for a TV that is FULLY capable of pulling it's load at speed on the two lane roads to the Coast. You may not mind going 35 mph up a grade, but the 15 cars behind you sure might.
Dude you know I'm a diesel guy same as you but think about what you just said in your last sentence.:S A new Chevy 6.0 would SPANK your old Cummins pulling any grade. It might be revving but it would.
