Probably because of market demand and gov't regs.
The 3.5 liter ecoboost makes 370hp and 430 lb-ft of torque. Scale that up to the size of the big three diesels and your're looking at about double those numbers.
We've recently seen 8.1 liter gas engines fit under pickup hoods. A 8.1 liter forced induction gas engine would be a monster. Probably pass anything but a gas station...
