My two cents, if I'm just fueling up and will be at the truck/pump it stays running. If I'm going the check the oil or go inside the truck gets shut down.
As Hannibal said, there is no need to let the turbo cool down if you drove at surface street speeds for a few blocks. Unless you just pulled a hard grade and rolled right in to a fuel stop, outlook or whatever.
