Sounds like a good trip. Lots of advice here. If you listen to all of it, you won't ever leave home.
I am a little less conservative on these things (I would say more realistic). The only real concern I would have is to make sure you do some sort of shake down trip before you go. It is my opinion and experience that RV quality is not nearly as good as it should be, and you almost certainly will find multiple issues that need to be addressed with the RV.
As far as weather, watch the forecast, take your time. Hopefully you are not on a strict time line. If so, you can enjoy the sights along the way and wait out the weather.
