We almost always cook outdoors. Simple marinades can be made up ahead of time for chicken breasts and steaks, or better yet, a meat rub that doesn't need refrigeration. Veggie and/or potato foil packets make great sides. Quesadillas are also a favorite -- SUPER easy to wrap in foil and grill over the fire. And Hubby loves "Pizzadillas", which is a quesadilla filled with pesto, pepperoni, mozzarella and other favorite pizza ingredients. You can use a foil pie tin to make some amazing campfire nachos.
