there is a forum topic for this, but it's not very active. we have a 2-burner stove and a small fridge, so we have not been "cooking in" a lot - other than coffee and pancakes. What is your favorite small trailer cooking experience? stove or campfire? Easy and make-ahead is OK - just want ideas for next week.JIM

i've cooked just about everything, including roasting a large ham for Christmas in my little trailer. ok well, "in" is a stretch. I use my webber kettle grill for just about everything I can, keep the cooking mess out of the trailer.Toast and eggs, sometimes sausage or bacon on the little stove... and side dishes to go with whatever's on the grill.my favorite is sausage or ribs, simple rub, wood chunks and lots of time on the grill smoking. as the smell of meat wafts through the campground I notice a lot more folks walking by the campsite :)

With the exception of grilling more when RVing, our menu is pretty much the same as when we are home.

We prepare a lot of meals at home and freeze them. Things like spaghetti sauce, sloppy joes, meatballs and gravy, soups, stews, etc. can be kept frozen then heated when you're ready to serve them.

We almost always cook outdoors. Simple marinades can be made up ahead of time for chicken breasts and steaks, or better yet, a meat rub that doesn't need refrigeration. Veggie and/or potato foil packets make great sides. Quesadillas are also a favorite -- SUPER easy to wrap in foil and grill over the fire. And Hubby loves "Pizzadillas", which is a quesadilla filled with pesto, pepperoni, mozzarella and other favorite pizza ingredients. You can use a foil pie tin to make some amazing campfire nachos.For breakfast we'll often make these Breakfast Eggs in Foil Bowls which are versatile and can be customized for everyone's taste. We camp in a Class B Camper Van so we understand the challenges of having a small fridge and two-burner stove.

Smoked Sausage, Potatoes & Green Bean Packets (We make this almost every time we camp)Grilled Pasta Packets (We use ricotta instead of goat cheese)Chicken Enchilada Nacho Bowls (Make the chicken mixture at home. It's got a kick, so if you don't like spicy, omit the chipotle.)
