I believe the OP means 5 gals on the propane tank, in other words a standard 20 lb cylinder. The fridge uses very little, you should be able to get a week from a tank at least.
You don't mention if there is a bath house at this park, I would think there must be? If so, showers etc can be done there, get a blue tank, porta-tote, or what have you to drain the holding tanks and take to the dump station in town.
I can't imagine the tanks in a 20' TT are very big, so the gray tank is going to be an issue if no bath house.
As was mentioned, two batteries and some sort of solar arrangement would be helpful, as would LED lights to limit current usage at night. There are likely gen run rules that they as hosts especially need to follow, so running a gen all day is probably not gonna happen.
Remember that the fridge needs 12v at the circuit board to function, so dead battery = no fridge regardless of how much propane you have.
Reagrding the HW heater, I turn it on when I get up for morning dishes and a shower, then off all day. Water is still warm enough for dinner dishes in the evening.
