I don't quite understand how a factory order gets "cancelled"? My first thought is that they changed model years, and now you should be getting a 2016 with all the same specs. If that is the case the factory should have advised the dealer of what was happening and contacted you asap. I am no expert on Ford vehicles so cannot help with your "plan b" truck. Just my take but if you are already lamenting trips to the scale and careful packing then doesnt that take the fun out of camping? I would want a decent buffer for that trip when you need all your stuff, water, food, drinks, firewood...and extra kid or two and bikes....you get the idea. I hope it works out to your satisfaction.
