To unhijack the thread, I don't take mine off the truck either, but mostly because the floor won't support occupants with the camper off the truck, and because the jacks are manual crank.
Frankly, if I were in that position, I'd use common sense. If high winds are forecast, I'd probably load up ASAP. If it's not so windy that you're not uncomfortable being in the camper, I wouldn't worry about loading it. Just don't dilly-dally. Get it up, get the truck under it.
