When using the 30 amp your adapter ties the two legs together. This should not be an issue.
One thing is the water heater should be on the leg that is not used by the converter or inverter/charger.
120 volt water heater element should not be used when connected to 30 amp. Good chance if used to trip pedestal breaker.
