Thanks a lot DG, much appreciated.
I had been wondering about the Extended Tongue vs the Extended hitch, but hadn't got that far yet.
Trailer:
Initially I'll probably get a temporary 6x10 opened trailer or so, just to carry the ACE. An enclosed one for both buggys and Yes, I like the idea of the Man-cave thing to get out of the rain without crowding the camper. I'd go with an enclosed trailer, V nose, with the idea of storing additional things like you noted above. Solar panels on the trailer with a few batteries etc.
bka0721 has a great setup and while not as extensive, I'm using that as standard.
Electrical:
Beyond just flipping a switch, I'm lost. The Arctic fox will have 2x160 panels (320) on it and I believe the 2 batteries are the 29?s (not 27 or 31s) When I eventually do get the Enclosed trailer I'll have them linked up to each other with a toggle switch. Again, bka0721 has it pretty well mapped out and from what I understand, it appears to be a great system. I do have a honda 2000i? Gen, only used it once, but plan on carrying it around. LEDs, yep, all over the place
WiFi/TV:
I'll check out the boosters etc. I had a Cradlepoint router with an older Verizon Dongle. At end of contract upgraded to the Jet Pack with something like 8 access points so just using that without the router anymore. I have the old magnetic antenna, but the short little new dongle cord isn't working. (the old 6" dongle won't work on the JetPacks, big surprise there Verizon) It's just me and I may have apx 4 devices connected at anytime.
Camper:
I don't plan on taking it off unless I have to, but will need to get used to loading/off loading on the Flat bed. I'm not sure how high it will be, but told the Flat Bed is only 2" higher than a regular bed, but believe that was when I was looking at the 3500. I'm getting the 5500 so not sure, suspect it'll be a little higher.
I'll be a "Long Tripper" after the initial breaking in phase. Sitting at home sucks.. heheh, I mean what's the point. (just joking here)

While I'm not a 'dunner' I plan on hitting the dunes, not Calif fairly frequently.
