Did you read page one of this thread or the linked thread? With 3500 lbs, the 2500 squatted within 1.8" of the bump stop and the 3500 squatted within 2". A .2" difference with 3500 lbs.
IMO if you need 2500 lbs of payload either will do it with no issues at all. Personally I'd have no concerns loading up to my RAWR of 6500 lbs.
If you want the coils but a little less squat, get a 2500 and add Timbrens or airbags.
I was very impressed with the thoroughness of ib516's post though---excellent information!
