OP I just couldn't imagine buying a truck knowing you're going to be close or overload the ratings. Most people that are trying to push the #s on a 2500 ended up in their situation by either having the truck before the trailer or just not knowing what they were doing. Of course, I'm also well versed in trying to keep the DW happy :)
You might also remind her it will ride A LOT more smooth when loaded. I'm not sure if that's most of the time she will be in the truck or is it's also used as a daily driver for you two.
In any case, I vote for the 3500 and not having to think about #s.
