plugged into shore power, no 12 V

You need a working battery hooked up at all times when you're using the trailer.

Converter should have been supplied power to trailer 12V DC system (interior lights, water pump, furnace, thermostat, fridge etc.) but doubt it would have supplied DC power to slides due to the way they are wired in.
Slides are typically wired directly to battery due to high amp draw.

So with battery disconnected not surprised slides didn't work.
But rest of DC system should have as converter powers dc system when hooked to AC shore power.

Converter should have 13.2V DC output minimum (measured at converter) with 110V AC power input.

Some older model converters needed a connected battery to at as load but would still function without a battery...just not stable output.
Your 2007 shouldn't need that battery as a load.

Your converter may not have sufficient capacity to run the slide without the extra power supplied from the battery.
When connected to shore power does any of the 12 volt items work? Water pump, lights, etc?
You may have lost 120 volt shore power
Using slide could have blown fuses in the converter or 12 volt distribution panel.
Slides maybe connected straight to the battery and does not go through 12 volt distribution panel which is very likely.

Is there a chance the positive battery cable was touching the metal frame? If so it may have blown a 12 volt fuse when you plug in. Was your camper was plugged in with the breaker turned on?

Same here.

My '98 Coachmen TT (no slides) works fine without batteries connected. Even my digital thermostat, which requires 12V DC to operate, works without batteries.

Google 12volt side of life, read and LEARN. JMO

We did pretty much the same thing the other day. with trailer plugged in and no battery hooked up the lights slide everything worked fine - even had the furnace and radio on while we cleaned and winterized. But, it sounds like from other replies that some trailers require a battery hooked up if you want shore power. Always make sure the battery cables are well taped off so the ends can't touch anything metal when the batteries are disconnected, if the ends touch metal while you are plugged in you could blow your whole electrical system out - but hopefully just a fuse.
