With our travel trailer, we have a two way Dometic fridge with electronic ignition. It is designed to run on propane while under way. Absolutely no problem letting it run when you are driving.
As far as stopping for gas, I don't worry about it because I drive a diesel and fill up in the truck lanes. If I did pull up to a pump that also pumped gasoline, then I would turn it off just to be on the safe side.
That's a VERY good point. My RV fridge is 3-way and is 40 years old. It was meant to be used on 12v while driving. And without auto ignition, and 40 year old parts, the risk of driving with it on propane are greater than the risk for others with newer systems.
Why would risk be greater than newer systems?
Both systems close propane gas valve when flame goes out.
Newer systems will attempt relight but if that fails gas valve closes.
IF it was unsafe then it would also be unsafe to operate while sleeping
