Good to hear you're back into Diddums. She was looking pretty good last year.
I really don't think you're going to have a condensation issue, it could only happen in a certain environment. When you're traveling down the road, there is all kinds of air moving through the walls, even if you glue and staple everything. It is the nature of small openings. You can prove this to yourself when you have the walls done. Do a pressurized leak test and see where the air is traveling. I bet you'll see some air leaking through the walls.
FWIW, I glued in 1" foam board, covered it with 4 mil poly, taped the seams, installed 1/4" foam board over all that mess, and then paneled. I still had air moving through the walls.
