We have a Ford F250 and Hallmark Ute pop up (soft top) which allows us to access remote places for photography and rock hounding. The F250 is a 4x4, has both the off road package and tow package. The Hallmark has a lower profile and less weight for better handling on the backroads. We did have a Tacoma and Four Wheel Camper before but it was too small for us plus our gear and dog. It did enable us to access many off road areas. We think it is a compromise between comfort and access.
If your wife is into photography then you need to go off the main roads for photo ops. Granted there are the iconic shots (The Watchman at Zion, Oxbow Bend in the Tetons, sunset/sunrise at Bryce) that are a few steps from your vehicle at an overlook on a paved road, but the best photographers seek out the uncommon. Last trip found us in some amazing places that a passenger car or even a truck with hard-side camper wouldn't venture, the latter just because of all the shaking on the washboards and ruts. Of course, a 4x4 like an FJ or Jeep will get you out there even more and if we were younger, we would opt for that choice with a platform bed.
As others have pointed out and you have acknowledged, you will need to decide what is more important to both you and your wife. Happy trails.
PS: we were at several places and were the only ones there. It was an incredible feeling to know that you are the only one within miles to be witnessing the coming sunrise revealing the geology all around you. It made us feel both special and humble at the same time.
