My current summer tires have a load range index of 121 (3200 lbs) as I went to a 17" rim and have 265s on them. My winter tires have a load range index of 123 (3400 lbs) as they are also 265s but on the stock 16" rims.
I have been across the continent and back on all types of roads and have never felt that I was unstable. Last summer my daughter and I explored Idaho, which have some very twisty roads ( roads in my must travel routes via motorcycle book ) and I had no problem keeping up with the car traffic ( I did wish I was on the Motorcycle!). I do pull over if I do get a line up behind me that I am the cause of. The KYB monomax and Timbrens have improved the cornering ability of the rig.
You could alway go to 285s, but would need to raise the front of the truck slightly to have them fit and that would give you a greater payload for the tires.
