RAM will have the higher stickered payload. Ford can have the higher axle weight rating if equipped right. My 2016 RAM CCLB SRW Cummins/Aisin has a payload just over 4000lbs. A Laramie would be slightly less payload unless you get the 68RFE transmission as they are lighter than the Aisin. I tow a 2018 Open Range 374bhs which has a dry pin weight of about 2500lbs.
