I am looking for a Class C, 26-32' long, no slides, with a loveseat or at least a comfy chair behind the passenger seat. The only ones I've found are Coachmen Leprechaun or Freelander. Does anyone kn...

Most of the newer ones do not have that floor plan but if you are looking used,the Fleetwood Tioga/Jamboree from the years 2001 to about 2009 in the 26 Q or Ranger have that floorplan,a lot of people that own them have done what you are suggesting.
Such as my 2006 Tioga 26Q,as seen in my signature.
Or you could look at Former Rentals the Majestic 23A has a floor plan that has a small seat behind the passenger seat that I have seen removed and replaced.
Also the Majestic 28A has a couch that could be removed.
