Since all Prevost coaches are conversions using the Prevost chassis, and are custom ordered, I see no reason why a customer could not order a specific length to be produced during that process.
If they don't make them, you can't order them. Prevosts did offer a 40 ft. and a 45 ft. length for many years (can't remember the cut-off date, maybe late '90's for discontinuing the 40 ft.). Retooling for someone wanting a 35 Prevost bus would cost 10's of millions for the factory.
But let's say, you buy a shell and have it customized to a shorter bus. A converter will not do this as they only convert the interior.
I have a friend that wanted a 4 door Rolls Royce convertible. RR doesn't make that and wouldn't do it (friend flew to the factory in England). So, he bought a new RR Phantom, found a speciality custom shop and had the top cut off and the frame reinforced. The whole process took 8 yrs as the first two shops screwed it up. It was an ordeal but he finally got the car. Spending a huge sum for all of this just to have a 'one of a kind' was silly to me. RR makes a 2 door convertible .... adding another set for rear doors and the whole process to convert a Phantom he could have had 4 Phantom drop-head coupes. :h
Now, how is he going to get parts if something fails? Like the huge convertible top? Once the tip of the saw hit the metal on that new Phantom, the warranty was gone.
